Recipe: Carrot Cake Chia Pudding

Easter eggs here, carrot cake and chocolate there – snacking is part of Easter. You don't want to do without anything during the holidays, but you also live according to the motto "Balance is key"? Then this vegan carrot cake chia pudding recipe is made for you. The basic recipe is not only simple, but also ideal for preparing and taking away . Carrot cake for breakfast - without a guilty conscience? Here you go:

Ingredients for two servings

For the pudding:

  • 375 ml oat milk, almond milk or coconut milk
  • 4 tbsp carrot juice
  • 2-3 dates
  • 4 tbsp chia seeds
  • 1 tbsp sultanas/raisins
  • 1 tablespoon numove Shake Vanilla
  • 1/2 tbsp cardamom, ground
  • 1/4 tsp ginger, dried & ground
  • 1.5 tsp ground cinnamon
  • a pinch of vanilla powder

For the topping:

  • 3-4 tbsp vanilla soy yoghurt
  • optional for chocolate fans: nucao bars

Chia pudding - the preparation:

🥕 Pit the dates and puree them with a blender or blender. If the dates are very firm, you can soak them in water first (preferably overnight).

🥕 Put the date puree together with the remaining ingredients (without topping) in a bowl and mix everything well

🥕 Wait 4-5 minutes and then stir everything again.

🥕 Time to rest: Let the chia pudding rest in the fridge for at least 4 hours - better overnight.

🥕 Now divide the pudding evenly between two bowls or serving glasses.

🥕 Without topping? Without us! Add some soy yogurt and cinnamon before serving. For all gourmets: The chia pudding gets that special finishing touch if you add a few fine nucao graters on top.
